How To Make Chocolate Oatmeal Cookies in the Slow Cooker

1. Add the oatmeal, dark chocolate, coconut oil, almond extract, and vanilla extract into a slow cooker. 

2. Cook on low heat for 2-3 hours or until the chocolate has melted. Be sure to stir every hour or so to prevent it from burning. 

3. After the chocolate is melted, take a cookie scoop and scoop cookies onto a parchment lined baking pan. 

4. Place the cookies in the fridge for 10 minutes to set up. Serve and enjoy!

  • Chocolate not melting? No problem, mix in an additional tablespoon of coconut oil. This will help the chocolate melt without it seizing up.
  • A large spoon works. If you don’t have a cookie scoop, it’s fine to use a large spoon.
  • Play with the extracts. You can make all sorts of flavor combinations by swapping out the almond extract. Chocolate extract, mint extract, and caramel extract are just a few ideas to try.
  • Save on cleanup. One of the fastest ways to save time cleaning up is to use a crockpot liner. You can throw it out when you are done!

Play around with the ingredients to make several different combinations of flavors. Here are some of our favorites:

  • 2 cups Peanut Butter Chips + 2 cups White Chocolate Chips
  • 2 cups Mint Chocolate Chips + 2 cups Dark Chocolate Chips
  • 4 cups Milk Chocolate Chips
  • 1 cup each Milk chocolate, Dark, White, and Caramel Chips
  • Swap the chocolate chips for chopped gourmet chocolates or candy bars
  • Add in 1/2 cup of your favorite nuts. Pecans, walnuts, or peanuts are all great!

What Kind Of Oats Do I Need?

I prefer the texture of old fashioned rolled oats the best. They hold up well to being heated for 2-3 hours and don’t end up mushy. 

In a pinch, you could also use minute oats, but they may get a little soggier than what you like. I don’t recommend using steel-cut oats because the texture will be way off. 

How Long Do The Cookies Last?

They will last up to one week stored in an airtight container. They can be stored at room temperature or chilled in the fridge.

Can You Freeze Leftover Cookies?

Yes! For best results, flash freeze the cookies on a baking sheet. Put them in the freezer for 2 hours, then remove them and place them inside of a freezer safe container. This will keep them from sticking together. You can grab as many cookies as you need and thaw them on the counter before serving.

Chocolate Oatmeal Cookies

Cook Time: 2 hours
Total Time: 2 hours 10 minutes

Sweet, tender cookies loaded with oats, chocolate, and a touch of almond flavor.

Ingredients

  • 3 cups of oats (I used big oats)
  • 3-4 cups of dark chocolate chips
  • 1 tbsp coconut oil or other light tasting oil
  • 1 tsp vanilla extract
  • *1/2 tsp almond extract (optional)

Instructions

  1. Place oats and chocolate in addition to other ingredients into the slow cooker
  2. On low you want to melt the chocolate over 2-3 hours. Keep an eye on it and stir every hour. If your chocolate is not melting chocolate you can add in an additional 1 tbsp coconut oil.
  3. Remove once melted and scoop onto a parchment tray with a spoon. I used a pretty large soup spoon. 
  4. Let set for 10 minutes in the fridge
