How do you make potato chips from scratch?

Slice the potatoes into a bowl and immediately toss them with olive oil. Season lightly with salt and arrange them in a single layer on a prepared baking sheet with parchment paper. Bake in the oven until golden brown. Season with salt & pepper when they come out of the oven.

What kind of potatoes are used for potato chips?

A baking potato is the most common potato used for making potato chips, but  you can use other potatoes as well. Each one will create a different type of flavor, and you may want to augment that flavor with spices like a chipotle spice or packet of Ranch Dressing.  Russet potatoes are usually flavored with butter and salt.

How do you thinly slice potatoes?

Slice the potatoes very thinly (about 1/8 inch thick) and uniformly so they cook evenly. This is a great time to break out your mandoline slicer or use a very sharp chef’s knife.

What can I use instead of a mandoline?

Vegetable Peeler. This option will give you the potato shape that most resembles those you’ll get from a mandoline

A Chef’s Knife.  This option will give you a little thicker potato chip.

Why are my homemade potato chips soggy?

Low starch potatoes

High starch potatoes tend to be a lot dryer with less water content, making them the perfect spud for frying. Low starch potatoes have a higher water content, and are great for boiling.

Examples of high starch potatoes I can use to make chips:

Russet, Idaho and Yukon gold potatoes are starchy and great for baking, mashing and deep-frying. Their high-starch content produces an even color when cooking and their starch granules swell as they cook.

How do you keep homemade potato chips crispy?

Store them in an air-tight container for a period of several days.
