When you think back to the great times in life, most of our memories include food.  Holidays, family gatherings, special occasions, parties…all are memorable in part because of the food chosen for the event or gathering.

Because of this, it’s important to choose foods for your gathering that are versatile, appealing, and as awesome as possible.  Well then, let me introduce you to a personal favorite: my favorite Sweet Potato Casserole recipe.

Sweet potatoes (or yams) are wonderfully versatile and accent many types of meals and gatherings.  This recipe is sure to delight your friends and family and may even help you make new friends! Perhaps the best part is that this dish is quite easy to make.

What is a sweet potato?

The sweet potato is a starchy, sweet-tasting root vegetable. They have a thin, brown skin on the outside with coloured flesh inside – most commonly orange in colour, but other varieties are white, purple or yellow. You can eat sweet potatoes whole or peeled, and the leaves of the plant are edible too.

Mixing the sweet potatoes together with the eggs, milk, butter and vanilla into a yummy consistency and then topping your creation with a dazzling array of dark brown sugar, melted butter and pecans, you now have a masterpiece in the waiting.  Heat and prepare to amaze everyone who is lucky enough to enjoy this dish!

Are sweet potatoes good for digestion?

Sweet potatoes are high in fibre, which has been shown to promote a healthy digestive system.

Are sweet potatoes safe for everyone to eat?

On the whole, sweet potatoes are an excellent addition to a balanced diet. However, they do contain something known as oxalates which binds calcium and other minerals. Too many oxalates in the diet may cause kidney stones and so should be eaten in moderation if you have existing kidney stones or are at high risk of developing them. If you are concerned, check with your Primary Care Provider.

Sweet Potato Casserole

  • 2 large cans of yams
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ½ stick butter

Topping:

  • 1 cup dark brown sugar
  • ⅓ cup flour
  • 1 cup chopped pecans
  • ⅓ cup butter (melted)
  1. Preheat oven to 350
  2. Using an electric mixer mash the two cans of yams and ½ stick of butter together . Add the eggs in one at a time. Next pour the sugar and 1 tsp of vanilla. Pour mix into baking dish and set aside.
  3. In separate bowl, using a fork mix the brown sugar, flour, pecans and melted butter together. Sprinkle on top of the sweet potato mixture and bake for 30 minutes
