What do you need to make Peppermint Pop Rock Rice Krispie Treats?

Butter – To help bind all the ingredients together and give a buttery yumminess to every bite.

Mini Marshmallows – They will make the treats extra ooey and gooey!

Peppermint Pop Rocks – Experience an incredible sensation and minty flavor in these treats.

Rice Krispie Cereal – You’ll love the texture and the way it tastes with the other ingredients.

Pop Rocks – The real star of the show is lots of exploding pop rocks. Who can resist?

How to make Rice Krispie Treats

Melt the butter in a large pot or saucepan using medium heat.

After the butter has melted, add in half of the bag of marshmallows and cook until melted. Stir frequently.

Take the pan off of the heat and mix in the cereal. Gently stir until it’s almost all the way incorporated and add the rest of the mini marshmallows. Sprinkle in the pop rocks.

Use a wooden spoon and continue to mix.

Don’t let the last half of the marshmallows melt entirely; you want them to stand out in the treats.

Pour the rice crispy mixture into an 8×8 baking dish.

Melt the white chocolate and carefully drizzle over the top of the krispie treats.

Add a few extra pop rocks on top for a garnish and let them cool completely.

After the rice krispie treats have cooled, cut into squares or other fun shapes and enjoy!

Why Are My Rice Crispy Treats Hard?

The main reason why some rice krispie treats turn out hard is that they have been heated using too high of heat. Using medium heat is vital to obtain the perfect texture for these peppermint pop rock rice krispie treats.

If you have some hard treats, go ahead and place what you are ready to eat on a microwave-safe plate. Heat them up for 10-15 seconds. This should soften them. Don’t heat too long or they will become dried out and even harder.

Can I Use Marshmallows That Are Past Date?

Sadly, no! While you can still eat marshmallows that are past their date, they aren’t a good fit for rice krispie treats. The reason is that older marshmallows tend to turn into a glob instead of melted and being gooey. Your best bet is to pick up a new bag and use the other ones for other baked goods or recipes that call for them to be melted.

Can I Use Flavored Marshmallows?

Yes! Flavored marshmallows are so yummy and add even more charm and fun to the crispy treats. There are so many flavors to choose from nowadays. Just remember to pick something that will taste good with peppermints like vanilla or cocoa.

Peppermint Pop Rock Rice Krispie Treats are a quick, fun and easy recipe for the whole family to fix.  You will love the Snap, Crackle and Pop out of them!   


  • 4 tbsp Butter
  • 24 oz Mini Marshmallows
  • 8 packets Peppermint Pop Rocks
  • 8 cups Rice Crispy Cereal
  • 1 cup White Chocolate Chips (Melted)
  • Pop Rocks (extra garnish)
  1. In a pot or large saucepan over medium heat, melt butter.

  2. Once butter is melted add one bag of marshmallows and melt completely.

  3. Once melted take pot off the heat and pour in rice krispie cereal and stir until almost mixed, then add in half bag of mini marshmallows and pop rocks.

  4. Finish mixing completely.

  5. You want the last half of your marshmallows to be only slightly melted, but fully incorporated in your rice krispies.

  6. Once mixed, put in a 8×8 baking pan.

  7. Heat up white chocolate and drizzle over rice krispies. 

  8. Garnish with pop rocks and cool completely.

  9.  Once cooled, cut into desired shapes and enjoy!
