Easy Key Lime Cookies Recipe

Ingredients Needed:

Ingredients for Filling

  • Cream
  • Sweetened Condensed Milk
  • Key Lime Juice 
  • Powdered Sugar
  • Lime Zest

How To Make Easy Key Lime Pie Cookies (Crumbl Copycat)

For the cookie

  • Preheat the oven to 350º
  • Line a baking sheet with parchment paper and set aside
  • Cream together butter and both sugars until light and fluffy.
  • Add in the egg and vanilla and mix completely.
  • Next sift in all purpose flour, salt, baking soda, baking powder and cornstarch.
  • Mix until it just comes together.
  • Using a large (3 tbsp) cookie scooper, form a ball of dough.
  • Roll dough in the crushed graham cracker
  • Place on baking sheet, press down the center with a tbsp measuring spoon
  • Bake for 10 mins
  • Remove from oven, press down on the center with a ¼ cup measuring cup
  • Return to the oven for 3 min
  • Remove and let cool fully.

While the cookies are baking make the filling.

  • Beat the cream cheese until smooth – do not skip this or it will be lumpy
  • Once smooth, gradually add sweetened condensed milk
  • Add 3 tbsp powdered sugar (if it’s too runny add one more)
  • Add 1 tsp lime juice. Filling should NOT be runny
  • Scoop into the well of the cookies.
  • Refrigerate until set (45min-60min)
  • Top with whipped cream and a lime slice.

Where To Buy Key Lime Cookies?

Well, our “go to” is our local Crumbl Store.  The store in our area opened recently and my daughter is OBSESSED!  She orders several dozen for her and her co-workers every couple of weeks.  Don’t get too attached to a certain flavor because they rotate their flavors weekly.  You then get to fall in love with a new cookie! Mine are the key lime ones- but you’d never know that, right? LOL!
