These Blueberry Cheesecake Popsicles are not like your typical fruit based popsicle. Yes, they do have blueberries but they also have cream cheese which makes them more like frozen cheesecake on a stick. Rich, creamy and a real treat.

Blueberry Cheesecake Popsicle Ingredients
- Frozen blueberries
- Sugar
- Cream Cheese, softened
- Lemon Juice
- Lemon Zest
How to Make Blueberry Cheesecake Popsicles?
Option 1:
- In a small saucepan combine frozen blueberries, 1/3 cup sugar and lemon zest.
- Heat and stir until sugar dissolves.
- Pour into a blender and blend until smooth. Remove from the blender.
- Mix cream cheese, the 2nd 1/3 cup granulated sugar and the juice of one lemon in the blender and blend until smooth. If it’s chunky, add 2-3 tbsp of milk to thin it out.
- Add 1/3 cup of the blueberry mixture to the cream cheese and fold gently.
- Pour the cream cheese mixture into the cavities of the popsicle holder.
- Then pour the blueberry/sugar mixture in.
- Use a knife or skewer to swirl the mixtures to pop any air bubbles and create a marbled effect. Note each popsicle will look slightly different with a different marbled effect. Piping bags can also make this easy to do.
- Add in the popsicle sticks.
- Freeze for 8 hours or overnight
Option 2:
- Add all ingredients to a blender and blend until smooth.
- Pour into the popsicle molds. Freeze for 8 hours.
- These will be a consistent color throughout.

It will take quite a few hours to freeze though I usually recommend freezing them overnight just to make sure they are the right consistency.
Can I use fresh fruit instead of frozen fruit?
Both fresh and frozen fruit will work in this recipe. I always try to keep a few berries whole to add to each popsicle.
How Can I Make Popsicles Without A Popsicle Mold?
If you don’t have a popsicle mold, line a muffin tray with liners and then pour in the batter. Freeze as you would if you are using the popsicle mold. An ice cube tray will also work as will empty individual yogurt containers.
How Do You Remove Popsicles From A Mold So They Don’t Break?
If you want to make sure your popsicles don’t break when you remove them from the mold, run the mold under warm water to loosen them up. You can also take a sharp knife and run it around the edge of the popsicle so it slides out evenly.
What kind of cream cheese works best in these popsicles?
I recommend using full fat block cream cheese in these popsicles. Low fat will work but you won’t get the same rich taste. Make sure you buy plain cream cheese. You definitely don’t want any garlic or chive flavors in your popsicles. 🙂
