1. Heat oven to 350 degrees.

2. Grind up the oats by pulsing it 5-6 times in a small food processor, until you break up some of the oats.

3. Sift in the flour, baking soda, salt, cinnamon, and nutmeg, and pulse 5 times more to thoroughly combine the ingredients.

4. Using a large mixing bowl, beat the butter until it is smooth and creamy.

5. Add brown sugar and granulated sugar and continue to mix until light and creamy.

6. Stir in an egg and vanilla. With a wooden spoon, scrape down the sides of the bowl and mix again. 

7. Mix the oat mixture gradually until it is well combined.

8. To form perfect, uniform cookies, use a cookie scoop and put them on an ungreased baking sheet.

9. Bake one batch of cookies at a time at 350 degrees for 12-15 minutes.

10. After baking cookies, allow them to cool for 2 minutes, take them off of the baking sheet, and put them on a baking rack.

Ingredients

  • 2 cups old fashioned oats
  • 2 cups flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 cup butter (softened)
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350 degrees
  2. Place oats in a food processor. Pulse 5-6 times, just breaking up some of the oats.
  3. Add flour, baking soda, salt, cinnamon and nutmeg. Pulse 5 additional times, combining the ingredients.
  4. In a large mixing bowl, whip butter until smooth and creamy
  5. Add granulated and brown sugar and until light and creamy
  6. Add egg and vanilla. Mix well. Scrape down the sides of the bowl and mix again.
  7. Slowly add oat mixture mixing until well combined
  8. Use a cookie scoop to form cookies and place on an ungreased baking sheet.
  9. Place one cookie sheet at a time in a preheated 350 degree oven for 12-15 minutes.

Notes

Allow cookies to cool for 2 minutes, then remove from the baking sheet and place on a baking rack.
