Our version of Chicken Chili Soup Recipe has classic flavors and thanks to a simplified method, Hello… Instant Pot®, cooks more quickly than traditional chicken soups with the hints of chili and lime!

How to Make Chicken Chili Soup

Ingredients – Boneless, Skinless Chicken Breasts – Chicken Broth – Chives – Diced Fire Roasted Tomatoes – Diced Tomatoes – Green Chilis – Baby Carrots – Potatoes – White Beans – Olive Oil – Garlic – Salt – Pepper – Celery – Corn – Chili Lime Rub -our recipe! – Limes – Cheddar Cheese – Cilantro

How to Make Chicken Chili Soup

Step 1 Rub chicken with chili lime rub, salt and pepper.  Heat the olive oil in the Instant Pot and add chicken

Step 2 Saute the chicken on both sides until cooked through, let chicken cool and then shred.  Return chicken to Instant Pot.

Step 3 Add stock, lime juice and all remaining ingredients.

Step 4 Seal Pot and cook on high pressure for 15 minutes. Using the quick release method, release the pressure.

Ladle the soup into bowls and garnish with a bit of cheddar cheese and cilantro. Squeeze extra lime in if desired
