Easy Homemade Cornbread Muffins Ingredients

  • Yellow Cornmeal- The Star of This Show!
  • All Purpose Flour-When in doubt, always go with “all purpose” flour
  • Salt-All baked goods taste better with a touch of salt
  • Sugar- To sweeten Things Up
  • Baking Powder- To lift your muffins
  • Egg- At room temperature, egg yolks break more easily, allowing them to mix more evenly with the egg whites and other ingredients
  • Milk-
  • Unsalted Butter-Do not use salted butter instead of unsalted butter

How To Make Easy Cornbread Muffins From Scratch

  1. Preheat the oven to 400
  2. Sift dry ingredients together in a medium bowl.
  3. Beat the egg, add milk and melted butter in a large bowl.
  4. Fold the dry ingredients into the wet ingredients- mixing only enough to dampen the flour.
  5. Fill the greased muffin pan, or muffin tin with paper liners, ⅔ full and bake in the preheated oven at 400 for 25 minutes.

What Pan Size and Shape Should I Use To Make These Muffins?

To make sure the muffins rise evenly, we’ve used a standard 12 hole muffin pan. This ensures that each muffin has ample room to expand, resulting in evenly-baked muffins that are light and fluffy. You an either grease the muffin tins or use cooking spray to ensure they release from the muffin form without andy sticking.

What Is The Oven Temperature And Time I Should Use For This Recipe?

We decided to cook the muffins at 400 for 25 minutes, and they turned out fantastically. The crust was nice and crispy, and the inside was fluffy and moist. We were really pleased with how they turned out.

How Should The Batter Be Mixed (e.g., by hand or with an electric mixer)?

Many baking recipes—particularly cake, cookie, biscuit and muffin recipes—call for you to mix dry ingredients into wet “until just combined.” When you’ve got a stand mixer whirring away, it can be tempting to let it run just a little longer while you finish up the dishes or wipe off the counter—but don’t do it!

When you mix flour into your batters and doughs, you’re developing gluten. The more you work with the flour, the tougher your batter will become.

This Easy Cornbread Muffin recipe is a classic comfort food and this recipe is simple and delicious. The great addition of sugar gives the muffins a slight sweetness and a nice texture. They’re perfect for a quick snack with a drizzle of honey (my favorite way to eat these tender cornbread muffins), a big dollop of butter or as part of a meal.

This simple recipe reminds me of good days when my grandmother used to keep traditional cornbread in a bread basket on the counter. For best results, store this easy homemade cornbread recipe in plastic wrap or in an airtight container.
