Cornmeal muffins have been a staple of meal time for many families, especially in the south, and we think our Easiest Cornmeal Muffin recipe will be a great one to add to your list of favorites.

Health conscious people will be especially glad to know that cornmeal has some advantages to regular flour as well.  Unlike flour, which is made from wheat grains, corn meal does not contain gluten, so it makes for a safe cooking ingredient for those suffering from celiac disease or gluten intolerance, according to Colorado State University.

Eating corn meal also offers some health benefits because it serves as a source of essential nutrients.  And ultimately… it’s just delicious!
