1. Begin by preheating the electric smoker to 250 degrees F. 

2. In a large bowl, mix together the eggs, almond flour, parmesan cheese, cup of Worcestershire sauce, seasonings, and ground beef together. 

3. Form the meatloaf mixture into a loaf shape and place it in an aluminum pan. Add to the top of the meatloaf lots of ketchup or bbq sauce. 

4. Cook in the smoker for 30 minutes and check the temperature. Top with more ketchup and continue to cook. Using a digital thermometer, cook until the internal temperature of the meatloaf reaches 165 degrees F for the best smoke flavor.

Yield: 1 Meatloaf
Prep Time: 10 minutes
Cook Time: 1 hour 30 minutes
Total Time: 1 hour 40 minutes

Ingredients

  • 2 large eggs

  • 1/2 cup almond flour

  • ½ cup parmesan cheese

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons onion powder

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • 1 teaspoon black pepper

  • 2 pounds lean ground chuck

  • 1 cup Ketchup for top of loaf


Instructions

  1. Preheat Smoker to 250 degrees
  2. In a mixing bowl, combine all ingredients together.  Form into a loaf and put in an aluminum baking pan. Cover the top of the meatloaf with ketchup
  3. Place the pan with the loaf into the smoker.  Check at the 30 minute mark.  Add more ketchup to the top if you want. 
  4. The meatloaf is complete when the meat thermometer reaches 165 degrees.
