Easy Microwave 10- Minute Enchiladas

There are various times every season that you need a dish that you just know everyone will love. Early winter get togethers? You’ll want something great to warm up the occasion. May, of course, brings all of the Cinco De Mayo celebrations you’ll be invited to.  Then there will be summer get togethers, and while we all love burgers on the grill, we all also love a great variety of foods.  Heading into the fall, tailgating means it’s time to break out your favorite dishes, and plenty of them! And then during the Holiday Season, with all of the Office parties and family gatherings that are filling up your schedules, you just know that it is vital that you keep a bevy of recipes in mind that cover a variety of tastes.

Of course, the most important requirement for your “short list” of recipes is simple: they have to be great! And this recipe for Microwave 10 Minute Enchiladas fits the bill. And even more importantly, they’re easy to fix, quick, super tasty, and when you set up your spread of food on your party table, they’ll be the most visually appealing dish there!

What you will need to make

Microwave 10-MINUTE ENCHILADAS

  • For the Enchiladas

    Enchilada Sauce

  • Corn Tortillas (GF)
    Cooked Chicken
    Shredded cheese (Cheddar, Monterey Jack, Colby, etc.)
  • For the Enchilada Sauce

    Oil
    Flour blend
    Chili Powder
    Ground Cumin
    Garlic Powder
    Onion Powder
    Dried Oregano
    Salt, to taste
    Chicken Broth
    Water

  • Starting with your choice of chicken styles, such as shredded, cubed, diced, or even Rotisserie, you’ll surround it with a delectable assortment of spices and seasonings that grab you by the nose and embrace your mouth with a bold deliciousness that will be more of an “experience” than it will be a meal!  Be sure to fix plenty…enchiladas are great as leftovers, or fix some ahead and freeze them. To ensure you’ll have a dish already prepared for a meal in the near future. Tasty, easy, economical, appealing to the eyes…what’s not to love?

If your tortillas were stored in the fridge, or are not very flexible, wrap them in a paper towel and microwave for 30 seconds to heat them up.

Spread about ½ cup of enchilada sauce over the bottom of a 9×13 glass (microwave safe) pan.

Mix the cilantro, chicken, and about 1 cup of enchilada sauce together so that they are evenly combined.

Fill each tortilla with filling and roll. Place in the pan and repeat with the remaining tortillas and filling.

Spread any remaining enchilada sauce over the top of the enchiladas. 

Sprinkle with the shredded cheese.

Microwave for 5-7 minutes, or until the cheese is melted, the sauce is bubbly, and the enchiladas are heated through.

For the Enchiladas

  • 2½-3 cups Enchilada Sauce
  • 12 Corn Tortillas
  • 2 cups Cooked Chicken, (shredded or diced)
  • 1 cup Cheese, (shredded ( cheddar, Monterey jack, Colby, etc.))

For the Enchilada Sauce

  • 3 Tablespoons Oil
  • 3 Tablespoons Flour
  • 1 Tablespoon Chili Powder
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Onion Powder
  • 1 teaspoon Dried Oregano
  • Salt (to taste)
  • 1½ cups Chicken Broth
  • 1½ cups Water

For the Enchiladas

For the Enchilada Sauce

  1. In a saucepan mix together all the spices, the flour, and the oil. 
  2. Heat while whisking until fragrant about 3-5 minutes (you want the floury taste to cook out also.)
  3. While whisking add the chicken broth and water and whisk until smooth. 
  4. Heat until the sauce comes to a boil, and then simmer for 2-3 minutes or until the sauce is thickened.
