This summer I had smoked meatloaf for the first time and I was hooked!  

Back Story:

 This past summer we set up our fifth wheel camper permanently at a local lake.  In our little campground there are only 5 permanent campers; however, around the corner on the point of the lake there are several other permanent camp families. On Saturday evenings a bunch get together and make a family dinner to share.  Seems I usually make the cocktails- favorite recipes to come soon!  

On one particular evening, Laura made her smoked meatloaf in their traeger smoker.  Everyone around me had been raving about her meatloaf before it was finished.  

Let me tell you, it totally lived up to the hype 

During a cornhole competition that went well into the morning, a couple of the younger guys snuck up onto Shane and Laura’s porch and stole the remainder of the meatloaf out of their outdoor refrigerator!

My guys totally loved Laura’s meatloaf.  I asked Laura for her recipe but we do not have a smoker at home.  I played around with her recipe and came up with our Easy Smoked Meatloaf Recipe made in the oven. Which is a HUGE hit at our house!

What Do You Need to Make Easy Smoked Meatloaf In The Oven

  • Ground Chuck– From the front of the cow we get generous cuts that have been keeping us in burgers and meatballs since, well… forever. Don’t forget about all those flavor-packed fats too – trust us, it’s worth it!
  • Quick Oats– These delicious rolled pieces have been steamed and sliced even thinner than old fashioned varieties so they can be whipped up into something comforting faster.
  • Milk
  • Dried Minced Onion
  • Egg
  • Monterey Jack Cheese
  • Liquid Smoke- Liquid smoke is a magical elixir made from burning wood chips and distilled into an irresistible flavor. Add some smoky sizzle to your food without the hassle of using actual firewood with this amazing pantry staple!
  • Ketchup
  • Brown Sugar
  • Mustard

How Do You Make Easy Smoked Meatloaf In The Oven

This is such an easy smoked meatloaf recipe to throw together. Preheat the oven to 350 degrees. In a large mixing bowl add all the meatloaf ingredients: ground chuck, quick oats, milk, dried minced onion, egg, monterey jack cheese and liquid smoke into the bowl. 

Get your hands in there and mix it, thoroughly. If not a fan of raw meat and eggs use a big spoon but in my opinion, hands mix it the best. Once mixed you will need to have a baking pan with a rim ready to use. 

Form the meat mixture into 6 or 7 small loaves. ( 2.5 inches by 3.5 inches-approximate)

Then in a small mixing bowl add the ketchup, brown sugar and mustard together. Stir until combined. Use a tablespoon and spoon the sauce on top of each small meatloaf. Then place the pan with the meatloaves in the oven for 45 minutes to 1 hour.

Yes, we do it often!  Depending on the size of your muffin pan, make a ball out of the meat mixture.  It should fill the muffin pan â…” in each cup.

Can You Use This Easy Smoked Meatloaf Recipe In A Smoker?

Of Course! Just leave out the liquid smoke when making the meatloaf mixture. Form into a loaf shape on a baking sheet and place on the wire rack under indirect heat in your pellet smoker.

Make sure you have an empty drip pan. For best results, check your meat thermometer after 1 hour. The internal temperature of the meatloaf should 160 f. You should have the perfect smoked meatloaf!

What Should The Internal Temperature Of The Smoked Meatloaf In The Oven Be?

Easy Smoked Meatloaf {In the Oven}

Yield: 6 loaves

Love the taste of smoked meat but don't have a smoker? Well, I've got an Easy Smoked Meatloaf recipe made in the oven just for you!

Ingredients

  • 1 lb ground chuck
  • 1 cup rolled quick oats
  • ¾ cup milk
  • 1 lg egg
  • 2 tbsp minced onion (dried)
  • 2 tbsp liquid smoke
  • 1/2 cup Monterey Jack Cheese
  • FOR THE SAUCE:
  • 1 cup ketchup
  • ½ cup brown sugar (packed)
  • 2 tbsp mustard

Instructions

Preheat oven to 350
