How to make the Easiest Creamy Potato Soup

1- In a large stove pot on medium-high to high heat combine potatoes, celery, carrots and chicken broth together.
2- Bring to a boil and reduce to medium heat.
3- Cook for 20 minutes or until potatoes are soft.
4- In a separate pot on medium heat, melt butter and add flour.
5- Whisk together until well combined.
6- Whisk in milk and cook until thick, stirring constantly.
7- Add milk mixture to the potatoes and incorporate thoroughly.
8- Add salt and pepper to taste.
9- Add the sour cream and mix well.
If you would like to thicken your soup even further, take ¼ of your mixture and carefully add it to your blender. Pulse mixture a couple of times before adding it back to the soup. Repeat as desired. You want to avoid blending it too much. You can also use an immersion blender if you have one.

  • 2 cups carrots, (chopped)
  • 29 oz chicken broth
  • ⅓ cup butter
  • ⅓ cup flour
  • 2 ½ cup milk
  • ½ cup sour cream
  • Salt and Pepper
