Recipe For Halloween Cake Pops

  1. Begin by preparing cake per the instructions on the box. Be sure to include the standard ½ cup of oil in your cake as this will ensure the cake is moist and will bind together as a cakesicle. 
  2. When the cake is finished, immediately scoop it out of the pan with a spatula or other utensils. Place the cake in a  stand mixer bowl while it is hot. Be careful to not get burned by the hot cake!
  3. Mix the cake on low speed until it has binded into a ball in the center of the bowl. The cake being both moist and hot will help it stick together. If it is not binding together, you can add in 1-2 tablespoons of frosting to assist. The dough should be the consistency of cookie dough.
  4. Once your cakesicle dough is ready, take a heaping single scoop with a small ice cream scoop. 
  5. Place the scoop of cakesicle dough into the center of the mold. Press the dough into the mold and make it even with the top of the sides of the mold. You can use a knife to level out the top if you have used too much cakesicle dough.
  6.  Insert the sticks into the cakesicle mold and through the dough. The dough may rise a little in the mold once a stick is inserted. Gently press the dough back down. 
  7. Freeze the cakesicles in their molds for 30 minutes. After 30 minutes, remove the cakesicles from their molds and place on a sheet pan covered in parchment paper. 
  8. Using your fingers, shape the bottoms of the cakesicles. The overall shape should look similar to a bell. This step is to give the ghosts their shape.
  9. Return the cakesicles to the freezer for another 30 minutes. The frozen cakesicles will keep the cakesicles from falling apart in the melted chocolate. For this reason, do not take the cakesicles out of the freezer until you are ready to decorate.
  10. When the cakesicles are about to come out of the freezer, add 2 cups of white Candy Melts in a small bowl. Follow directions on the package to melt. Most candy melts will advise you to melt by defrosting in the microwave until melted. Be sure to never add any liquids to your melting candy. If the candy is not smooth enough after melting, add a teaspoon of oil at a time and stir.
  11. After the candy has melted, let it sit for 3-5 minutes to slightly cool. It will stay melted in this time frame.
  12. Taking one or two cakesicles out of the freezer at a time, begin decorating by either dunking or spooning the white melted chocolate over the cakesicle. Shake to even out the white chocolate. Immediately place the candied eyeballs candies where desired while the chocolate is still wet. Set the cakesicle on parchment paper to allow the chocolate to harden for 5-10 minutes. Repeat with the other cakesicles. 
  13. If at any point the melting chocolate is not smooth and of liquid consistency, you can add them back to the microwave on defrost to return to a more workable consistency.  
  14. Store cakesicles in the fridge in a ziploc or covered container until ready to serve.

The amount of icing needed depends on how quick you get the cake into the mixer and combine the cake and icing.  You can alway add more icing if needed but not the other way around.

Ingredients

  • 1 15.25 oz box Duncan Hines Chocolate Cake Mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • 1 12 oz bag Wilton Candy Melts, white
  • 1-2 tablespoons frosting, optional
  • .26 oz candy eyeballs

Instructions

  1. Begin by preparing cake per the instructions on the box. Be sure to include the standard ½ cup of oil in your cake as this will ensure the cake is moist and will bind together as a cakesicle. 
  2. When the cake is finished, immediately scoop it out of the pan with a spatula or other utensils. Place the cake in a  stand mixer bowl while it is hot. Be careful to not get burned by the hot cake!
