How To Make Easy Oatmeal Cookies with Bisquick?

  1. Preheat your oven to 350°F (190°C) and line two large baking sheets with parchment paper. This will ensure your cookies don’t stick and make cleanup a breeze.
  2. Combine the dry ingredients in a medium mixing bowl. Add the Bisquick Mix, Oats, Cinnamon, and Nutmeg stirring until well combined.
  3. Add the wet ingredients to a large bowl. Mix in the softened butter, brown sugar, egg, and vanilla extract. Stir until everything is well incorporated, add in your dry ingredients. If you’re adding raisins or chocolate chips, now is the time to fold them in.
  4. Scoop the dough onto the prepared baking sheets using a tablespoon or cookie scoop. Space the dough balls about 2 inches apart, Using the bottom of a glass, dip in a plate of sugar and flatten each cookie slightly. Redip into sugar after flattening each cookie.as they will spread slightly during baking.
  5. Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Keep an eye on your oven, as every oven is different and you don’t want to overbake them. The key to soft and chewy cookies is taking them out of the oven just when they’re set but still a little soft in the center.
  6. Cool the cookies on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely. This will help the cookies firm up a bit without becoming too hard.

Easy Homemade Oatmeal Raisin Cookies made with Bisquick!

Ingredients

  • 1 and 1 /2 cups Bisquick Pancake and Baking Mix
  • 1/2 cup old fashioned oats
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup raisins
  • 1 tablespoon sugar

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, stir together pancake mix, oatmeal, cinnamon and nutmeg. Set aside.
  3. Using a mixer, beat butter and sugar in a large bowl until light and fluffy.
  4. Mix in egg and vanilla.
  5. Add in bisquick mixture and mix until fully combined.
  6. Fold in the raisins
  7. Line a cookie sheet with a silicone baking mat or parchment paper.  Drop batter by tablespoons.
  8. Using the bottom of the glass, dip in a plate of sugar and flatten each cookie slightly. Redip into sugar after flattening each cookie.
  9. Bake for 9 to 11 minutes or until the edges are lightly brown.
  10. Cool for 2 minutes before transferring to a wire rack.
