What is the main ingredient that gives BBQ sauce its distinctive flavor and texture?

Many barbecue sauces’ acidic base, the tomato, is where the tangy flavor first emerges. Different varieties of vinegar, lemon, grapefruit juice, mustard, pickle juice, tamarind paste (which also lends a touch of sweetness), and even beer can be used to enhance acidic and sour flavors.
